Yesterday was my birthday. They say I’m 60 years old, but I don’t feel it at all!

Say hello to this cute little visitor we saw in the backyard of our new home here in Lancaster!
It’s a baby opossum, a common local animal seen here. They eat tons of ticks and help prevent Lyme disease in Pennsylvania!

Here are a few other amazing factoids about the largest member of the marsupial family in the Western Hemisphere:
They have a near immunity to rabies.
They can`t be harmed by the bites of rattlesnakes, cottonmouths and other pit vipers.
They have been around since the time of T-Rex and likely ate dinosaur eggs.
Early settlers in the Jamestown settlement in Virginia described them as "beast in bigness of a pig and in taste alike."
When threatened they will involuntarily faint, seemingly dead. At the same time, they release the smell of a dead or sick animal. Their lips roll back, baring their teeth and saliva foams from their mouths. They may remain like this from a few minutes to four hours.
They do not hang by their tails, as sometimes erroneously depicted.

Give us this day our daily bread. A Thanksgiving theme of sorts. This delicious loaf of sourdough bread (called a Micca) will be transformed into a Wild Mushroom Stuffing. But today I’m starting by cutting into half-inch cubes and then drying out. There will eventually be leeks, celery, crimini mushrooms, oyster and shiitake mushrooms, sage, thyme, parsley, eggs and veggie chicken stock.
The term micca means crumb and is the name of the oldest and most typical bread of Parma, Italy. This sourdough micca is from Saraghina Bakery here in Brooklyn.

Breaking News: Kenny and Michelle are Leaving NYC!
We are totally excited and very nervous to announce that we have put our apartment on the market (starting today!) and will soon be moving to Lancaster, Pennsylvania!
If everything works out we’ll actually move about mid-January of 2023.
There’s no single reason for the move, but we both feel that we’ve accomplished what we need to living in NYC, and it’s time to shake things up a bit in our lives.
We wanted to stay in the northeast of the country, and as a friend noted today, Lancaster is in the South West of the North East!
We’re looking forward to a slightly slower-paced lifestyle, and also the open country nearby. While Lancaster county is in the heart of Amish country, the city of Lancaster is totally cute, very walkable, and super friendly.
And with an Amtrak station right in town, it’s actually really easy to get here from NYC Penn Station — so we hope that y’all can come for a visit! We’ll actually have a guest room for you!
NYC (NY) has been home to us for many years — 30+ years for Michelle, and I was born here but lived in the mid-west a bit before we moved back to Long Island in the early 70’s.
We’ll miss all of our wonderful friends, and all the great things about NYC, but are looking forward to new adventures and experiences.
We’re still here for a couple more months, and hope to catch up with everyone before we go. But we’ll be fairly close by, and will swing back often, I’m sure.

CLOUDHENGE! I’ve never seen anything like this! As the sun was setting here in New York, we saw what looked like shadows on the bottom of the clouds.
Then it hit me, that these must be shadows of skyscrapers in the Manhattan skyline being projected onto the bottom of the clouds, by the very low angle of the setting sun shining upwards onto the clouds.

Inspired by our culinary crusader friends Leigh Witchel and Rodrigo Alonzo, we made a new dish here tonight — one that Michelle Dortignac has been hankering for for a while: African Peanut Soup. (Domoda)
We substituted no-chicken chicken stock, and some faux chicken for those respective ingredients, making this a 100% vegan endeavor.
From the recipe: Warming fresh ginger, jalapeño, cumin and plenty of garlic make a spicy base for this creamy, sweet-savory African peanut soup recipe.
Groundnut stews—groundnut is another word for peanut—are a traditional part of the cuisine of many West African countries, including Gambia and Ghana.
Peanut Butter Soup Obviously Has Peanut Butter—But What Else?

Couscous is a traditional dish of the Berbers, an ethnic group of North Africa, and means “well rolled” or “well formed.” It’s made from Semolina wheat and water, just like most pasta, but the method involves rubbing the damp wheat in one’s palms until it forms little balls.
This recipe is called Buttery Eggplants with Toasted Couscous, and is more of a middle eastern take on this classic North African dish.
There’s a lemon zest/juice and olive oil dressing with mint, basil, parsley, and a new ingredient for us, sumac powder. (Sumac berries are fruity, zesty, and a bit citrus in flavor.)
Over all it’s a nice dish, and a bit challenging and fun to make, as there a few different cooking methods going on at the same time.
Did I mention that these large couscous pearls feel really fun in your mouth? They’re slippery and chewy and soooo tasty!

Craving some fish tonight, we procured some nice salmon from the local and aptly named Food Emporium, along with some wild rice and rainbow carrots.
I was also craving teriyaki, so I made a simple but super tasty teriyaki glaze for the salmon. Used some vegetable stock for cooking the rice and then oven roasted the carrots.
The word teriyaki derives from the Japanese noun “teri”, which refers to a shine or luster given by the sugar content in the glaze (and cornstarch in my case), and “yaki”, which refers to the cooking method of grilling or broiling.
It is said that Japanese chefs invented teriyaki in the 1700s. Can you imagine the world without teriyaki before that?!

We just got this collection of crushed red pepper flakes, from a company called Flat Iron Pepper Company in Boulder Colorado!
Different mixes of these peppers produce different heat and flavor profiles: arbol, ghost, habanero, jalapeño, chipotle, ancho, scotch bonnet, red bell, sandia, and more!
And this new pepper grinder actually surgically slices the flakes rather than grinding them like a typical pepper grinder would.
